    Vegan Mediterranean White Bean Quinoa Burrito (air fryer)

    Burritos are one of my favorite things to eat, especially when they are crispy. This Vegan Mediterranean White Bean Quinoa Burrito (air fryer) is a fun twist on your traditional burrito. Although I crisped mine up in the air fryer, you can also do this in the oven.

    This vegan mediterranean burrito is

    What do I need to make a high protein vegan white bean burrito?

    • red bell pepper
    • onion
    • garlic cloves
    • dill
    • lemon
    • olive oil
    • yogurt
    • white beans
    • quinoa
    • paprika
    • salt/pepper

    Instructions to make vegan burrito with yogurt sauce

    1. Add your filling ingredients to a bowl and mix until combined.
    2. Microwave wrap for 30 seconds in the microwave. Add filling to wrap and roll burrito style. I recommend googling how to do this. Repeat for each burrito that you are making.
    3. If you would like your burrito crispy, air fry your burrito for 6 minutes at 400 degrees. Alternatively you can bake your burrito for 10-15 minutes at 425 degrees on a lined sheet pan. This step can be skipped however I recommend it if you have the time.

    How do I air fry a burrito?

    Air frying a burrito is easy. You just wrap up your burrito and put it in the air fryer. Then air fry at 400 degrees for 6 minutes.

    This makes enough for 3 wraps

    Filling

    • 1 red bell pepper - finely chopped
    • ½ red onion - finely chopped
    • 3 garlic cloves - finely chopped
    • ½ cup finely chopped dill
    • juice from 1 lemon
    • ¼ cup olive oil
    • ½ cup vegan or greek yogurt
    • 1 can white beans - drained
    • ½ cup cooked and cooled quinoa
    • ½ tsp paprika
    • 1 tsp salt
    • 1 tsp black pepper

    + burrito wraps of choice

      This is soooo good and even better because you can throw other ingredients you like or have in the fridge!! We added Greek yogurt and these were to die for!

      Love this so much - Full of flavor, filling, and healthy. Easy to make which is definitely a bonus. I used oat yogurt and it tasted great. As the other review mentioned, you could easily add other items into the recipe and it will taste great.
