Burritos are one of my favorite things to eat, especially when they are crispy. This Vegan Mediterranean White Bean Quinoa Burrito (air fryer) is a fun twist on your traditional burrito. Although I crisped mine up in the air fryer, you can also do this in the oven.

Ingredients for high protein vegan white bean burrito?
- red bell pepper
- onion
- garlic cloves
- dill
- lemon
- olive oil
- yogurt
- white beans
- quinoa
- paprika
- salt/pepper
Substitutions
- White beans - chickpeas are a good sub here.
- Yogurt - any unsweetened yogurt works here.
- Quinoa - any cooked grain works here, I just like quinoa because it is higher in protein.
Instructions
- Add your filling ingredients to a bowl and mix until combined.
- Microwave wrap for 30 seconds in the microwave. Add filling to wrap and roll burrito style. I recommend googling how to do this. Repeat for each burrito that you are making.
- If you would like your burrito crispy, air fry your burrito for 6 minutes at 400 degrees. Alternatively you can bake your burrito for 10-15 minutes at 425 degrees on a lined sheet pan. This step can be skipped however I recommend it if you have the time.

Love this so much - Full of flavor, filling, and healthy. Easy to make which is definitely a bonus. I used oat yogurt and it tasted great. As the other review mentioned, you could easily add other items into the recipe and it will taste great.
