Pistachio Cottage Cheese Ice Cream (High Protein)
Equipment
Ingredients
- 1 16 oz container full fat cottage cheese
- ¼ cup honey
- pinch matcha for color this is completely optional and does not affect taste, just makes ice cream more green
- ½ teaspoon vanilla extract
- ⅓ cup raw pistachios
Instructions
- Add cottage cheese, honey, vanilla and pistachios to a food processor or blender. Blend until smooth.
- Add ice cream to a bowl or loaf pan and freeze for 2-4 hours until ice cream is set.
- Serve and enjoy. I topped mine with additional chopped pistachios and a drizzle of honey. If your ice cream turns too hard you can let it sit out for 15-30 minutes to thaw slightly.
