This sandwich uses oyster mushrooms as a chicken substitute. Does it taste exactly like chicken? No, but it does offer a delicious "meaty" taste. The buffalo sauce is made creamy with tahini. Overall this sandwich is so good and I am obsessed with it.

Where can I buy oyster mushrooms?
A lot of grocery stores carry oyster mushrooms. I buy mine at Whole Foods, and if you are an Austin local, Central market also carries them. If all else fails, an asian grocery store will definitely have them.

Ingredients
This makes enough for 1-2 sandwiches
Oyster mushroom
- ~1 lb oyster mushrooms - torn into bite sized pieces
- 1 tbsp olive oil or avocado oil
- 1 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp paprika
- pinch salt/pepper
Buffalo Sauce
- ¼ cup hot sauce
- 1 tbsp tahini or cashew butter
- 1 tbsp apple cider vinegar
- 1 tsp soy sauce
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp maple syrup or honey
- pinch salt/pepper
+toasted bread of choice
Optional toppings
- sliced tomato (I used 1 tomato)
- lettuce
- thinly sliced red onion
- avocado (from ½-1 avocado)
- vegan mayo
Instructions
- Preheat oven to 400 degrees.
- Toss oyster mushroom in oil, soy sauce and spices. Add mushrooms to a sheet pan lined with parchment paper. Bake for 30-35 minutes, until mushrooms have started to brown and crisp.
- Mix together buffalo sauce ingredients.
- Once mushrooms are done cooking, toss them in the buffalo sauce.
- Add mushrooms to toasted bread with your favorite toppings.
