Mediterranean Sweet Potato Nachos with Beef
Equipment
Ingredients
sweet potatoes
- 1 large sweet potato - cut into roungs
- 1 tablespoon olive oil avocado oil or another neutral oil works
- ½-1 teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- pinch black pepper
Ground beef
Other toppings
- ½ small red onion - finely chopped
- ½ cucumber diced
- 8 oz cherry tomatoes - quartered
- 2-3 tablespoons fresh chopped parsley
- ½-1 block feta use your desired amount
- ~¼ cup hummus I like Ithaca Lemon Dill
- squeeze ¼ lemon optional
Instructions
- Preheat oven to 425 degrees. Add sweet potatoes to a sheet pan lined with parchment paper or silicone. Toss with oil and all seasonings. Bake for 25-35 minutes, until rounds are cooked through.
- Heat a skillet to medium heat and add ground beef and break apart with spatula. Toss together with seasonings and cook for 5-8 minutes, until browned and cooked through.
- Form bowls/plates with sweet potatoes and ground beef. Top with cucumbers, tomatoes, red onion, parsley and feta. Add dollops of hummus and a squeeze of lemon. Dig in adn enjoy.
