Ingredients
  

Filling

  • 1 red bell pepper - finely chopped or sub about 1 cup chopped sweet or any other color pepper
  • ½ red onion - finely chopped
  • 3 garlic cloves - finely chopped
  • ½ cup finely chopped dill
  • juice from 1 lemon
  • ¼ cup olive oil
  • ½ cup vegan or greek yogurt
  • 1 can white beans - drained
  • ½ cup cooked and cooled quinoa
  • ½ teaspoon paprika
  • 1 teaspoon salt adjust to your preference
  • ½-1 teaspoon black pepper adjust to your preference

Other ingredients

  • + burrito wraps of choice

Instructions
 

  • Add your filling ingredients to a bowl and mix until combined.
  • Microwave wrap for 30 seconds in the microwave. Add filling to wrap and roll burrito style. I recommend googling how to do this. Repeat for each burrito that you are making.
  • If you would like your burrito crispy, air fry your burrito for 6 minutes at 400 degrees. Alternatively you can bake your burrito for 10-15 minutes at 425 degrees on a lined sheet pan. This step can be skipped however I recommend it if you have the time.
