Chocolate Cottage Cheese Ice Cream (ice cream)

Ingredients
- 1 16 oz container cottage cheese (preferably full fat)
- ¼ cup honey
- ¼ cup cacao powder
- 2 tablespoons almond butter
- ½ teaspoon vanilla extract
- flaky sea salt to taste optional
Instructions
- Add cottage cheese, cacao, almond butter, vanilla and honey to a food processor or blender. Blend until smooth.
- Add ice cream to a loaf pan or container and freeze for 2-3 hours until set.
- Serve ice cream topping with flaky sea salt if desired.

This was really good! It tasted like a very rich chocolate ice cream that you get at a real ice cream parlor! I used peanut butter and maple syrup (since I didn't have honey or almond butter) and put in a few cocoa nibs for added texture. I used my Cuisinart and blended until it was smooth and creamy (then add the nibs). Wow, I'm impressed! I'll be making a lot more of this to satisfy my chocolate cravings!
