- all purpose flour - I do think an all purpose gluten free flour would work however it may alter the texture of the buns and make them more dense.

High Protein Cottage Cheese Burger Buns
Equipment
Ingredients
- 1 cup cottage cheese I used full fat
- 1 cup all purpose flour
- 1 teaspoon salt
- 2 teaspoons baking powder
- 1 beaten egg

- 1-2 teaspoons sesame seeds or poppy seeds
Instructions
- Preheat oven to 350 degrees.
- Add cottage cheese to a food processor and blend until smooth.
- Add flour, baking powder and salt to a bowl. Mix together. Fold in cottage cheese. Knead with hands until everything is just combined.
- Flour your hands so the dough does not stick. Divide out dough into 3 even sides pieces. Form into balls and add to a sheet pan lined with parchment paper or silicone. Flatten slightly with your hand so they are about the height/size of a bun keeping in mind that they will rise some what.
- Brush the buns with egg (you will not use the entire egg, I suggest scrambling it and eating it). Top with sesame seeds if using.
- Bake for 25-30 minutes and then let cool for at least 15 minutes. You can use them immediately or store in the refrigerator for 5 days or the freezer for months.
