Vanilla Cottage Cheese Chia Pudding
Equipment
- 1 blender
Ingredients
- ½ cup + 2 tablespoons milk of choice I used almond
- ⅓ cup cottage cheese full fat is best but low fat also works
- 3 tablespoons chia seeds
- 1 tablespoon maple syrup
- ½ teaspoon vanilla extract
Instructions
- Add cottage cheese and milk to a blender. Blend until smooth.
- Add chia seeds, cottage cheese mixture, vanilla and maple syrup to a bowl or jar. Mix until combined.
- Add chia pudding to the refrigerator and let set for at least one hour or overnight. For best results stir the chia pudding again after 5 minutes.
- Serve chia pudding with your favorite toppings and dig in.
