Golden Milk Chia Seed Pudding with Turmeric (vegan)
It is crazy to me that I went years without eating chia seed pudding, because now I eat it all the time. I seriously love the texture of it, and it is so fun to customize it with all sorts of difference flavors. This Golden Milk Chia Seed Pudding with Turmeric (vegan) is my latest concoction and it will be on rotation for me now!
This chia seed pudding takes literally 5 minutes to make, and can be prepped ahead of time for breakfast. It has healthy fats, protein and fiber so it is perfect for breakfast. Turmeric and ginger also add some anti-inflammatory properties to this pudding.

What do I need to make golden milk chia pudding?
- chia seeds
- plant milk
- turmeric
- cinnamon
- ginger
- black pepper
- maple syrup
What can I substitute in this recipe
- The spices can not be subbed as they give the golden milk flavor
- Fresh ginger can be subbed with ginger in powder spice form, but I recommend fresh ginger
- Plant milk can technically be subbed with regular milk, but of course then the recipe would not be vegan (:
- Maple syrup can be subbed with any other liquid sweetener (honey, date syrup etc)

Ingredients

- 3 tbsp chia seeds
- 1 cup plant milk
- ½ tsp turmeric
- ¼ tsp cinnamon
- ¼ tsp fresh grated ginger
- pinch black pepper (to activate the turmeric)
- 1 tbsp maple syrup
Instructions
- Add all ingredients to a jar or bowl and mix until combined.
- Add jar to the fridge, and mix again after 5 minutes.
- Let chia pudding set for at least 1 hour or overnight. If you want to eat this for breakfast I recommend making it the night before. I like to top mine with cacao nibs and fruit.
