Peaches and Cream Chia Pudding with coconut milk
Equipment
- 1 blender
Ingredients
- ¾ cup full fat or light coconut milk
- 1 juicy peach - stem and pit removed
- 1 tablespoon honey or maple syrup
- ¼ teaspoon cinnamon
- ¼ teaspoon vanilla extract
- 2 ½ tablespoons chia seeds
Instructions
- Add all ingredients except for the chia seeds to a blender. Blend until smooth.
- Add peach mixture along with chia seeds to a glass or bowl and stir to combine.
- Refrigerate chia pudding for at least 1 hour or overnight. It is recommended to stir the chia pudding again after 10 minutes to prevent clumps.
