Summer has me craving all of the fruit, especially fresh berries. One of my favorite summer desserts is berry crumble. However, I don't like having huge portions of dessert hanging around my house. So I decided to make a double of this Single Serve Healthy Blueberry Crumble (vegan) and it was a huge hit with me and my boyfriend.
This crumble is vegan and gluten free, plus it can be refined sugar free depending on what kind of sweetener you use.

What do I need to make a healthy blueberry crumble?
- blueberries
- arrowroot starch or cornstarch
- oats
- oat flour

- granular sugar

Substitutions
- sugar - you can use a granular sugar substitute if you would like.
Instructions
- Mix blueberries and starch in a small dish.
- Mix together crumble ingredients.
- Top blueberries with crumble.
- Bake crumble until set.
- Let cool and dig in.

Ingredients
Filling
- 1 cup frozen or fresh blueberries I used frozen wild blueberries.
- 1 teaspoon arrowroot starch or cornstarch
Crumble
- 3 tablespoon rolled oats
- 3 tablespoon oat flour
- 2 tablespoon melted coconut oil
- 2 tablespoon granular sugar I used Swerve
- pinch cinnamon
Instructions
- Preheat oven to 350 degrees.
- Add blueberries to a ramekin or small bowl and mix with starch.
- Add crumble ingredients to a small bowl and mix until fully combined.
- Top blueberries with crumble.
- Bake crumble for 30-35 minutes.
- Let cool and eat!
