Ingredients for healthy chocolate covered frozen yogurt bites
- pomegranate - This is the base for the cluster but any fruit can be used!
- yogurt - Regular or vegan yogurt can be used here. I used dairy free Cocojune and it came out great!
- vanilla - this rounds out the fruity pomegranate flavor.
- cashew butter - Feel free to sub this out for your favorite nut butter. I love cashew butter for its neutral taste.
- chocolate chips - I like dark chocolate but any technically works.
- coconut oil - coconut oil helps the chocolate to melt easier.
- flaky salt - an optional but recommended topping that elevates and balances the sweet flavors.

Substitutions
- cashew butter - can be subbed with any nut butter.
- yogurt - use vegan or regular yogurt here.
- coconut oil - you can use another oil like olive but coconut oil is prefered. DO NOT omit the oil because this will cause the chocolate to seize and create a whole mess.
Step-by-Step Instructions

Mix pomegranate, yogurt and cashew butter.

Freeze clusters.

Dip in chocolate and freeze again.

Serve.
Storage instructions
I recommend storing the clusters in the fridge in a sealed container for up to 3 days because this gives them the soft ice cream like texture.
You can also freeze them for 3 months and thaw them out as you want to eat them.
Recipe Pro-Tips
Make sure your clusters are full frozen before dipping them in chocolate. Otherwise they will melt and create a whole mess.
If you want to up the protein content use greek yogurt as your yogurt.

Chocolate Covered Pomegranate Yogurt Clusters
Equipment
Ingredients
- ~1 cup pomegranate seeds from 1 pomegranate, its okay if it's a little more or less than 1 cup
- ½ cup unsweetened thick yogurt - greek, skyr or coconut all work you can use vanilla yogurt if you want it sweeter
- ¼ cup cashew butter sub any nut butter
- ½ teaspoon vanilla bean paste or extract
- 1 cup dark chocolate chips or pieces
- 1 teaspoon coconut oil
optional toppings
- flaky salt
Instructions
- Add yogurt, vanilla and cashew butter to a bowl. Mix together until fully combined. Fold in pomegranate seeds.
- Spoon out mixture onto a sheet pan* lined with parchment paper (a plate or other flat surface also works) - forming 5-6 clusters. Freeze for 1-3 hours - until completely frozen through and solid. I have noticed that dairy yogurt takes longer to freeze than non dairy.
- Melt together chocolate and coconut oil. I melted mine for 3 30 second intervals in the microwave.
- Dunk each cluster in chocolate. Sprinkle over flaky salt if using. Freeze again for 10-15 minutes, until set.

You can store them in the freezer if you want to keep them long term, however if you are planning to eat them within 1 week they can be stored in the fridge
