- spelt flour - Spelt flour is slightly healthier than regular flour. Feel free to sub in all purpose instead.
- maple syrup - Maple syrup serves as the unrefined sweetener.
- avocado oil - Avocado oil adds healthy fats and moisture to this recipe.

Step-by-Step Instructions
Add all ingredients to a bowl and mix.
Add batter to a loaf pan and bake.
Let bread cool and dig in.

Vegan Sweet Potato Banana Bread with Avocado Oil
Ingredients
- 2 medium sized mashed bananas extra spotty or brown
- ½ cup mashed sweet potato
- ⅓ cup avocado oil sub any liquid oil
- ⅓ cup maple syrup
- 1 ½ cups spelt flour
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- pinch salt
- ½ cup chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Add all ingredients to a bowl except for the chocolate chips. Mix until just combined.
- Fold in the chocolate chips to the dough.
- Line a loaf pan with parchment paper. Add dough to the pan and bake for 45-55 minutes. I have a run of the mill oven and baked mine for 50 minutes on the dot.
- Let loaf cool for at least 20 minutes so it sets. Dig in and Enjoy.

Could you use coconut oil? Looks delish!

Olive oil would be a better sub because it is a liquid oil. Coconut oil should work but I can't say for sure.
