This apple pie chia seed pudding is a fun fall twist on your typical chia seed pudding. Since it can be prepped the night or several days before it is perfect for meal prep. This pudding requires less than 20 minutes of hands on cooking, it is super simple to make but so good.

Apple Pie Chia Seed Pudding
Ingredients
Pudding
- 3 tablespoon chia seeds
- 1 cup plant milk
- ¼ teaspoon pumpkin spice
- ¼ teaspoon vanilla
- 1 tablespoon maple syrup
Apple Topping
- 1 small apple - diced
- ¼ teaspoon cinnamon
- 1 tablespoon coconut oil
Instructions
- Add all pudding ingredients to a small glass or bowl. Mix until combined. Refrigerate for one hour or overnight. To prevent clumps, stir chia pudding after 5 minutes.
- Once your pudding is set, make your apple topping. Add coconut oil to a skillet over medium heat. Add apples and cinnamon. Cook for 8-10 minutes or until softened.
- Top or mix chia pudding with cooked apples and enjoy.
Notes
If you would like to prep it for breakfast just make it the night before and let it expand over night.
