- ΒΌ cup chia seeds
- ΒΎ cup milk of choice
- Β½ teaspoon pumpkin spice
- ΒΌ cup greek or thick yogurt of choice
- 1 scoop vanilla protein powder
Apple Topping
- 1 small apple - diced
- ΒΌ teaspoon cinnamon
- .5 tablespoon coconut oil or butter
Instructions
- Add all pudding ingredients to a small glass or bowl. Mix until combined. Refrigerate for one hour or overnight. To prevent clumps, stir chia pudding after 5 minutes.
- Once your pudding is set, make your apple topping. Add coconut oil or butter to a skillet over medium heat. Add apples and cinnamon. Cook for 8-10 minutes or until softened.
- Top or mix chia pudding with cooked apples and enjoy.
