Not kidding, I still dream about the pistachio desserts I had in Italy. Particularly the gelato and croissants. This pistachio chia pudding (blended) is inspired by all of the pistachio treats I had in Italy. No, chia seed pudding does not compare to gelato, but it is an easy way to satisfy that pistachio craving.
This chia seed pudding is blended so it gets rid of the bumpy texture. I for one love the texture of chia pudding but some people don't and that is okay. This chia seed pudding has that unique and rich pistachio taste and is so good. I am obsessed.

Ingredients for pistachio chia seed pudding
- plant milk
- pistachios
- water
- maple syrup
- vanilla extract

Instructions to make vegan blended pistachio chia pudding
- Add all ingredients to a blender and blend until smooth. This should take 1-2 minutes.
- Pour chia mixture into a jar or cup. Refrigerate for 1 hour.
- Add your favorite toppings and enjoy.
How do I get rid of the texture in chia seed pudding?
Blending the chia seed pudding gets rid of the bumpy texture. This makes it smoother like actual pudding.
Storage instructions
This chia pudding will keep well in the fridge in a sealed container for about 3 days.
Substitutions
- Plant milk - can be subbed with real milk if you aren't vegan
- Maple syrup - can be subbed with sugar or stevia
Equipment
I used my Vitamix blender for this recipe which I love. It is an investment piece but my last Vitamix lasted over 10 years!

Pistachio Chia Pudding (blended)
Ingredients
- ¼ cup chia seeds
- 2 tablespoons unsalted pistachios if you can't find unsalted rinse the salt off first
- 1 tablespoon honey or maple syrup
- 1 cup plant milk
- 2 tablespoons water
- ⅛ teaspoon vanilla extract
Instructions
- Add all ingredients to a blender and blend until smooth. This should take 1-2 minutes.
- Pour chia mixture into a jar or cup. Refrigerate for 1 hour or up to 24 to set.
- Add your favorite toppings and enjoy.
