Add all pudding ingredients to a small glass or bowl. Mix until combined. Refrigerate for one hour or overnight. To prevent clumps, stir chia pudding after 5 minutes.
Once your pudding is set, make your apple topping. Add coconut oil or butter to a skillet over medium heat. Add apples and cinnamon. Cook for 8-10 minutes or until softened.
Top or mix chia pudding with cooked apples and enjoy.
Notes
This makes 1 serving of chia pudding. If you would like to prep it for breakfast just make it the night before and let it expand over night. You can also prep the apples the night before.
