Substitutions
- maple syrup - can be subbed with honey (honey is not vegan).
- coconut sugar - can be subbed with brown sugar.
- almond butter - any nut butter can be used with the exception of tahini as it is too liquidy.
- DO NOT sub out the flours this will alter the recipe drastically.

The extra cookies can be stored in a sealed container in your fridge for up to 4 days.

Vegan Peppermint Double Chocolate Chip Cookies
Ingredients
wet
- 1 flax egg (1 tablespoon ground flax + 2 ½ tablespoons water)
- ¼ cup coconut sugar
- ¼ cup maple syrup
- 1 tablespoon melted coconut oil
- ½ cup creamy almond butter Make sure it has no added oils
- ½ teaspoon peppermint extract
- ½ teaspoon vanilla extract
dry
- ¼ cup + 3 tablespoons oat flour
- 2 tablespoons almond flour
- ¼ cup cacao powder
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¾ cup chocolate chips
- pinch salt
Instructions
- Make your flax egg by mixing together flax and water, set aside and let sit for 10 minutes until thickened.
- Preheat oven to 350 degrees.
- Add all wet ingredients to a bowl and mix until smooth. Pour in dry ingredients except for the chocolate chips and mix again. Lastly, fold in the chocolate chips.
- Using an ice cream scoop or a small handful of dough evenly distribute dough onto a lined baking sheet.* You do not need to form or flatten the dough, it will flatten out on its own. You should have 9 evenly sized cookies. Bake cookies for 12-14 minutes.
- Let cookies cool for at least 10 minutes and then enjoy! I like to top my cookies with flaky salt but this is optional.
