- cashew butter
- pumpkin spice
- baking powder
- baking soda
Substitutions
- maple syrup - can be subbed with honey (honey is not vegan).
- coconut sugar - can be subbed with brown sugar.
- cashew butter - any nut butter can be used with the exception of tahini as it is too liquidy.
- DO NOT sub out the flours this will alter the recipe drastically.
Storage instructions
The extra cookies can be stored in a sealed container in your fridge for up to 4 days.

Vegan Pumpkin Oat Flour Chocolate Chip Cookies
Ingredients
Wet
- ¼ cup pumpkin puree not pumpkin pie mix
- ¼ cup maple syrup
- ¼ cup coconut sugar
- ½ cup cashew butter or sub other nut butter
- ½ teaspoon vanilla extract
Dry
- ½ cup + 2.5 tablespoons oat flour
- small pinch salt
- ½ teaspoon pumpkin spice
- ¼ cup almond flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup chocolate chips
Optional toppings
- flaky sea salt to taste
Instructions
- Preheat oven to 350 degrees.
- In a bowl mix together wet ingredients. Pour in dry ingredients except for chocolate chips and mix to combine. Lastly fold in chocolate chips.
- Using an ice cream scoop or a small handful of dough evenly distribute dough onto a lined baking sheet.* You do not need to form or flatten the dough, it will flatten out on its own. You should have 9 evenly sized cookies. Bake cookies for 12-14 minutes.
- Let cookies cool for at least 10 minutes and then enjoy! I like to top my cookies with flaky salt but this is optional.
