I love the mint chocolate combination, it is one of my favorite ways to eat chocolate. Add in matcha, and you have a wonderful, deep array of flavors. I created these Matcha Mint Chocolate Chip Cookies (vegan) to embrace the chocolate mint combination. The green from the matcha reminds me of mint chocolate chip ice cream.

What ingredients do I need to make vegan matcha chocolate chip cookies?
- ground flax
- maple syrup
- coconut sugar
- almond butter
- vanilla extract

- coconut oil
- oat flour
- almond flour
- matcha powder
- baking powder
- baking soda
- chocolate chips
Can I leave out the mint?
Yes! If you are not a fan of mint feel free to leave it out. Then these will be regular matcha chocolate chip cookies and just as delicious.
What can I substitute in this recipe?
- DO NOT substitute the flours
- Coconut sugar can be subbed with brown sugar
- Maple syrup can be subbed with honey

These matcha mint chocolate chip cookies are a delicious vegan cookie recipe.

Ingredients

This makes 8-10 cookies
- 1 flax egg (1 tbsp ground flax + 2.5 tbsp water)
Wet
- ¼ cup maple syrup
- ¼ cup coconut sugar
- ½ cup almond butter (or sub other nut butter)
- ½ tsp vanilla extract
- ½ tsp mint extract
- 1 tbsp melted coconut oil
Dry
- ½ cup oat flour
- ¼ cup almond flour
- 1 tbsp matcha powder
- ½ tsp baking powder
- ½ tsp baking soda
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Make your flax egg by combining water and flax. Let set in the refrigerator for 10-30 minutes.
- Mix together dry ingredients and set aside. In a separate bowl mix together wet ingredients. Pour in dry ingredients and mix to combine. Lastly add your flax egg and mix until just combined. I used my hands to really combine the dough.
- Using an ice cream scoop or a small handful of dough evenly distribute dough onto a lined baking sheet. Bake cookies for 10-12 minutes.
- Let cookies cool for at least 10 minutes and then enjoy!
