  • Make your flax egg by mixing together flax and water, set aside and let sit for 10 minutes until thickened.
  • Preheat oven to 350 degrees.
  • Add all wet ingredients to a bowl and mix until smooth. Pour in dry ingredients except for the chocolate chips and mix again. Lastly, fold in the chocolate chips.
  • Using an ice cream scoop or a small handful of dough evenly distribute dough onto a lined baking sheet.* You do not need to form or flatten the dough, it will flatten out on its own. You should have 9 evenly sized cookies. Bake cookies for 12-14 minutes.
  • Let cookies cool for at least 10 minutes and then enjoy! I like to top my cookies with flaky salt but this is optional.

This makes 9 cookies. Nutrition is for 1 cookie or 1/9 of the recipe.
 
*Since this dough is vegan it is very sticky and wet. This is okay, work quickly and with wet hands.
