Peach Caprese Sandwich Grilled Cheese
Ingredients
- ~8 leaves of basil
- 4-5 slices of mozzarella
- 2 thin slices of tomato
- 4 thin slices of peach
- pinch salt/pepper
- 1 teaspoon olive oil
- 1 teaspoon balsamic
- + 2 slices sourdough bread or bread of choice
Instructions
- Assemble sandwiches with basil, tomato, peach and mozzarella on good quality bread. I recommend sourdough. Drizzle olive oil and balsamic over the sandwich and then sprinkle salt and pepper. Close sandwich.
- Heat a splash of oil in a skillet oven medium heat. Cook sandwich until golden on one side and then flip and repeat.
