I added fennel instead of celery to this recipe to give it italian vibes. The parsley adds a fresh herby flavor and the capers add brininess and acidity. Overall, this is an amazing sandwich recipe.

This Mediterranean White Bean Fennel Salad Sandwich is a delicious vegan sandwich recipe.
Ingredients
- This makes enough for 2-3 sandwiches
- 1 can white beans - drained and patted dry
- 1 bulb fennel - finely chopped
- ¼ cup finely chopped parsley
- ¼ cup capers
- salt to taste
- black pepper to taste
- juice from ½ lemon
- 3 tablespoon vegan yogurt sub greek yogurt or mayo
- 2 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon mustard
- ½ teaspoon paprika
- salt/pepper to taste
