Bananas are the best, especially in baking. I tend to like to make more out there and creative desserts, but sometimes you just need the classics. These vegan oatmeal banana muffins with chocolate chips are the perfect healthy muffin recipe.

These muffins are gluten free, refined sugar free and higher in fiber and healthy fats. These muffins use way less sugar than most banana muffin recipes. These muffins make a great grab and go snack or dessert. I personally love them after lunch as a little treat. Simply delicious.

Let's get into the recipe.
These oat flour chocolate chip banana muffins are
- easy to make
- made with healthier ingredients
- plant based, gluten free and dairy free
- full of fiber
- perfect for a snack or dessert

Instructions to make vegan banana bread muffins
- Preheat your oven to 400 degrees.
- Make your flax egg by mixing ground flax and water. Let sit refrigerated for 10-30 minutes.
- In a large bowl mix together all of your wet ingredients including the flax egg. Pour in dry ingredients minus chocolate chips and mix until just combined. Lastly fold in your chocolate chips.
- Add batter to a lined or silicone muffin tray. I filled each slot with a little less than ¼ cup of batter.
- Bake muffins for 5 minutes at 400 degrees, turn down the heat to 350 and bake for 16-20 more minutes.
- Let muffins cool, and serve. These muffins can be stored in the fridge for about 5 days or in the freezer for months.

- coconut sugar
- avocado oil
- vanilla
- oat flour
- oats
- baking powder
- chocolate chips
Substitutions
- maple syrup - can be subbed with honey
- almond butter - can be subbed with cashew butter or peanut butter (tahini would be to liquidy)
- coconut sugar - can be subbed with brown sugar

Wet
- 3 spotty mashed bananas
- 1 flax egg 1 tablespoon ground flax + 3 tablespoon water
- ¼ cup maple syrup
- ½ cup almond butter
- ¼ cup coconut sugar
- 1 tablespoons avocado oil or sub another neutral oil
- 1 teaspoon vanilla extract
Dry

- 3 teaspoon baking powder
- 1 cup chocolate chips
