Instructions for cottage cheese ice cream with dates

Blend together ice cream.

Add ice cream to loaf pan and freeze for 3-4 hours.

Serve and enjoy!

Storage instructions
You can store the ice cream in a sealed container in your fridge for up to 2 weeks. To eat again let it thaw for about 10 minutes.
Substitutions
- honey - this can be subbed with maple syrup.
- dates - you can sub in real caramel if you would like, I would sub about ΒΌ cup.

Salted Caramel Cottage Cheese Ice Cream (high protein)
Equipment
Ingredients
- 1 16 oz container full fat cottage cheese
- ΒΌ cup honey
- Β½ teaspoon vanilla extract
- pinch sea salt
- 6 dates if they are hard soften them in water for 5 minutes
Instructions
- Add cottage cheese, honey, vanilla and sea salt to a food processor or blender. Blend until smooth. Add dates and blend again. You want the dates to be broken up but not fully blended.
- Add ice cream to a bowl or loaf pan and freeze for 3-4 hours until ice cream is set.
- Serve and enjoy.

Love this account and blog!! Made the salted caramel cottage cheese ice cream today and YUM!!!! I did make sure to soften the dates in hot water prior to using. I took half of this over to our business and handed it in little cup, EVERYONE loved it and couldn't believe it was cottage cheese. I'm a type II diabetic, and just reading your recipes has given me some of my own ideas that I'll be trying. I talked to a dietician and so far,to keep my sugar under control is I've eat a lot of protien and vegetables. Yes sometimes I eat rice potatoes noodles and bread, you have to eat. But I see many vegetarian recipes I will be trying very soon!

You need to avoid the honey and probably the dates. Use Lakanto carmel sauce instead it's made with monk fruit instead of sugar...
