Blend together ice cream.
Add ice cream to loaf pan and freeze for 3-4 hours.

- dates - you can sub in real caramel if you would like, I would sub about ¼ cup.

Salted Caramel Cottage Cheese Ice Cream (high protein)
Equipment
Ingredients
- 1 16 oz container full fat cottage cheese
- ¼ cup honey
- ½ teaspoon vanilla extract
- pinch sea salt
- 6 dates if they are hard soften them in water for 5 minutes
Instructions
- Add cottage cheese, honey, vanilla and sea salt to a food processor or blender. Blend until smooth. Add dates and blend again. You want the dates to be broken up but not fully blended.
- Add ice cream to a bowl or loaf pan and freeze for 3-4 hours until ice cream is set.
- Serve and enjoy.

Sorry I am not sure, you should be able to find a 16 oz container, it is 2 cups. Having the exact right amount of cottage cheese is not super important here as everything gets blended and frozen.

I haven't tried, it would be a lot less creamy but would probably work.

Why would you use 0% fat cottage cheese? It's an old fact that fat is not good for us..., but instead, it's helping the carbohydrates from the dates, to be absorbed slower, so the insulin level does not grow fast, and it does not peak. Saturated fat from animal products, is so, so good. Just read a little bit about it.

Hi, you can store it in the freezer! It will just have to thaw out a bit before you can eat it again.

I made two batches of this last night. I used full fat for one and 2% for the other. Out of six people none of them noticed any difference. Everyone loved the results though! I limit my saturated fat intake so I was the one who wanted to experiment.
