Kiwi Lime Chia Seed Pudding (vegan)
Ingredients
- This makes 1 serving of chia pudding
- 3 kiwis - peeled
- 1 cup plant milk
- ¼ cup chia seeds
- 1-2 teaspoons maple syrup
- juice from ½ lime
- ¼ teaspoon vanilla extract
Instructions
- Add kiwi milk, lime, maple syrup and vanilla to a blender. Blend until smooth.
- Add chia seeds to a jar, glass or bowl. Pour in kiwi mixture and mix until combined.
- Add chia pudding to the refrigerator and let set for 1-24 hours. I recommend mixing the chia pudding again after 5 minutes to prevent clumping.
- Serve chia pudding with your favorite toppings, I went with yogurt, lime zest and extra kiwi.
