Substitutions
- olive oil - can be subbed with avocado oil.
- honey - can be subbed with maple syrup.
- dill - can be subbed with parsley or mint.
- feta - you can use goat cheese or vegan feta. The salad will be a lot less flavorful if omitted.

Mediterranean White Bean Salad with Fennel
Ingredients
salad
- 1 bulb fennel - finely chopped
- 1 bell pepper - finely chopped
- 1 cucumber - diced
- 2 cans white beans - drained
- 1 8 oz block feta - crumbled
- ½ cup dill - finely chopped
- salt/pepper to taste
Instructions
- Add all salad ingredients to a bowl.
- Mix together dressing.
- Pour dressing over salad and toss to combine. Dig in and enjoy!
