Mediterranean White Bean Fennel Salad Sandwich

Ingredients
  

  • 1 can white beans - drained and patted dry
  • 1 bulb fennel - finely chopped
  • ¼ cup finely chopped parsley
  • ¼ cup capers
  • salt to taste
  • black pepper to taste
  • juice from ½ lemon
  • 3 tablespoon vegan yogurt sub greek yogurt or mayo
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon mustard
  • ½ teaspoon paprika
  • 4-6 slices bread

Instructions
 

  • Add white beans to a bowl and mash partially. Add all remaining ingredients to the bowl and mix until combined.
  • Add white bean salad to your favorite toasted bread. Add your desired toppings, I went with tomato and lettuce.

Notes

This makes enough for 2-3 sandwiches.
