Substitutions
- cilantro - any herb works here.
- jalapeno - feel free to omit if you don't like spice.
- green bell pepper - any bell pepper works or sub with zucchini or carrots.
- all purpose flour - all purpose gluten free flour would work.

High Protein Cottage Cheese Breakfast Biscuits
Ingredients
- 4 eggs
- 2 ½ cups all purpose or GF all purpose flour
- 1 ½ cups shredded cheddar cheese
- 1 ¾ cup cottage cheese I prefer full fat but low fat would also work
- 2 teaspoons salt
- 1 teaspoon garlic powder
- 1 tablespoon baking powder
- 1 cup cilantro - finely chopped
- 1 green bell pepper - finely chopped
- ½-1 jalapeno - finely chopped omit if you don't like spice
Instructions
- Preheat oven to 400 degrees.
- Add the first 7 ingredients to the bowl and mix until combined.Lastly fold in the veggies.
- Scoop out about ⅓ cup batter to the sheet pan lined with parchment paper or silicone per biscuit, making 11-12 evenly sized biscuits. Bake for 20-25 minutes.
- Let biscuits cool and then dig in.

Hi Kristi! I gave you 5 stars because I love the idea of using cottage cheese, though I haven't made these yet.
I am gluten sensitive, however, I've found commercial all purpose GF flours (which typically include ingredients like potato starch flour & tapioca starch flour) are tougher to digest than wheat flour!
I'd like to use almond flour, coconut flour, cassava flour or some combo thereof. Any thoughts or suggestions?
Also, I assume the baking powder is added at the end? The recipe says "add all ingredients UP TO the baking powder, then fold in vegies & scoop to baking sheet" without mentioning the baking powder again. And, do you find adding it at the end helps the baking process in some way? Or, am I missing something...

Hey Sarah, I fixed the instructions to be more clear about what I meant about the baking powder. I think almond flour would work however I am not sure about the amount, I would suggest adding it until the mixture is thick and you can form biscuits with it.
