Cucumber Crunch Salad with Tahini Dressing
Ingredients
Salad
- 2 medium cucumbers - sliced
- ¼-1/2 block feta - crumbled adjust to the amount of feta you want
- ½ cup finely chopped scallions
- 3 tablespoons fresh chopped mint
- ⅓ cup chopped pumpkin seeds
Instructions
- Add all dressing ingredients to a jar or bowl and mix.
- Add all salad ingredients to a bowl. Toss together with dressing and enjoy.
