Ingredients
- carrots
- parmesan
- garlic
- truffle oil

Substitutions
- parmesan - feel free to use a dairy free parmesan if desired.
- truffle oil - this can be left out if you don't like truffle.
- basil - sub in your favorite herb here.

Storage instructions
You can store the extra carrots in your fridge for up to 2 days. Keep in mind that they will lose their crisp. To reheat you can pop them back in the oven for a few minutes.

Use a good quality olive oil for the best tasting dressing. This is my favorite olive oil.
Not all parmesan is vegetarian so if that is important to you be sure to make sure it is not made with rennet!

Truffle Garlic Parmesan Carrot Fries
Ingredients
- 12 small carrots - cut into fries or 6 regular sized
- 1-2 tablespoons olive oil
- 3 cloves garlic - minced or pressed
- ½ cup grated parmesan
- pinch salt
- pinch black pepper
- ¼ teaspoon paprika
- 1-3 teaspoons truffle oil
- 1-2 tablespoons fresh chopped basil or herb of choice
Instructions
- Preheat oven to 425 degrees.
- Add carrots along with all other ingredients except for truffle oil and basil to a bowl and toss together until the carrots are fully coated with the parmesan and spices.
- Add carrots to a sheet pan lined with parchment paper. Bake for 27-35 minutes, until the carrots are crisped up and the parmesan is browned.
- Top carrot fries with truffle oil and basil. Enjoy.
