Garlic Parmesan Roasted Zucchini
Ingredients
- 2 zucchinis - sliced in ~¼ inch think pieces
- 3-4 cloves garlic - minced
- ⅓ cup parmesan
- 1 tablespoon olive oil
- pinch salt/pepper
- juice from ½ lemon
- ¼ cup fresh chopped basil
Instructions
- Preheat oven to 425 degrees.
- Add zucchini and all other ingredients except for the basil to a bowl. Toss to combine, until zucchini is fully coated.
- Add zucchini to a sheet pan lined with parchment paper. If any pieces of garlic or parmesan are left in the bowl add them to the tops of the zucchini slices.
- Roast zucchini for 20-30 minutes, flipping once halfway through.
- Serve zucchini topped with basil and enjoy.
