Substitutions
- Parsley - this can be subbed with basil.
- White beans - these can be subbed with chickpeas.
- Champagne vinegar - white balsamic can be used. You can also sub apple cider vinegar plus 1 tablespoon honey.

Sear halloumi.

Mix together dressing.

Toss together salad.

You can store the extra salad in a sealed container in your fridge for up to 5 days.
Recipe Pro-Tips
Use a good quality olive oil for the best tasting dressing. This is my favorite olive oil.
A good quality champagne vinegar will make this dressing. I love Brightland Champagne vinegar.
Recipe FAQS
Champagne vinegar is a light, mild vinegar made from fermented champagne or sparkling wine grapes. It has a delicate, slightly fruity flavor and lower acidity than many other vinegars, making it great for salad dressings, marinades, sauces, and recipes where you want brightness without an overpowering tang.
Halloumi is a hard cheese made from yaks milk and goats milk. It holds its shape when cooked.
Although this salad is filling on its own if you want to bump up the protein you can serve it with salmon, hard boiled eggs, chicken or even steak.

Crispy Halloumi Salad with Champagne Vinaigrette
Equipment
Ingredients
seared halloumi
- 1 block halloumi - sliced
- 1 tablespoon olive oil can also use butter
filling ingredients
- 2 cups finely chopped tomatoes from about 2 medium tomatoes
- 1 medium cucumber - finely chopped
- 1 large bell pepper - finely chopped
- ½ cup finely chopped parsley
- 1 medium red onion - finely chopped
- 2 cans white beans - drained
Dressing
- ⅓ cup olive oil
- ¼ cup champagne vinegar
- 1 clove garlic - grated or minced
- 1 teaspoon mustard
- 1 teaspoon salt
- pinch black pepper
- 1 teaspoon za'atar*
Instructions
- Add all dressing ingredients to a jar or bowl, mix together until combined. Set aside.
- Heat oil in a skillet over medium heat. Add halloumi to the skillet. Sear for 4-5 minutes on each side until golden brown. Let cool and then finely chop.
- Add all salad ingredients including the halloumi to a big bowl. Toss together with dressing. Taste and add additional salt and pepper if desired. Serve and enjoy.

What is considered a serving on the salad? 2 cups? 1 cup? Trying to figure out the nutrition for 2 cups of your salad. Does your nutrition include the dressing ?

Hi karen. I am not sure about cups. Nutrition is for roughly 1/3 of the salad with dressing which is about 1 bowl of salad.
