Recipe Pro-Tips
Use a good quality olive oil for the best tasting dressing. This is my favorite olive oil.
A good quality balsamic will make this dressing. Balsamic should be thick and syrupy. This is my favorite balsamic.

White balsamic is a lighter and less sweet version of balsamic. It is cooked at a higher pressure and lower temperature to retain the light flavor.
Halloumi is a hard cheese made from yaks milk and goats milk. It holds its shape when cooked.

Chopped Halloumi Salad with White Balsamic Vinaigrette
Ingredients
seared halloumi
- 1 block halloumi - sliced
- 1-2 teaspoons olive oil
filling ingredients
- 2 cups finely chopped tomatoes
- 1 cucumber - finely chopped
- 1 large bell pepper - finely chopped
- ½ cup finely chopped parsley
- ½ red onion - finely chopped
- 2 cans white beans - drained
Dressing
- ⅓ cup olive oil
- ¼ cup white balsamic
- 1 clove garlic - grated or minced
- 1 teaspoon mustard
- pinch salt/pepper
Instructions
- Heat oil in a skillet over medium heat. Add halloumi to the skillet. Sear for 4-5 minutes on each side. Let cool and then finely chop.
- Add all dressing ingredients to a jar or bowl, mix together until combined.
- Add all salad ingredients including the halloumi to the bowl. Toss together with dressing. Taste and add additional salt and pepper if desired. Serve and enjoy.

What is considered a serving on the salad? 2 cups? 1 cup? Trying to figure out the nutrition for 2 cups of your salad. Does your nutrition include the dressing ?

Hi karen. I am not sure about cups. Nutrition is for roughly 1/3 of the salad with dressing which is about 1 bowl of salad.
