seared halloumi
- 1 block halloumi - sliced
- 1-2 teaspoons olive oil
filling ingredients
- 2 cups finely chopped tomatoes
- 1 cucumber - finely chopped
- 1 large bell pepper - finely chopped
- ½ cup finely chopped parsley
- ½ red onion - finely chopped
- 2 cans white beans - drained
Heat oil in a skillet over medium heat. Add halloumi to the skillet. Sear for 4-5 minutes on each side. Let cool and then finely chop.
Add all dressing ingredients to a jar or bowl, mix together until combined.
Add all salad ingredients including the halloumi to the bowl. Toss together with dressing. Taste and add additional salt and pepper if desired. Serve and enjoy.
This makes a big salad that can be eaten as a side salad or as a main course.
*To replace 1 teaspoon of za’atar, mix ½ teaspoon dried thyme, ¼ teaspoon sesame seeds, and ¼ teaspoon sumac (or use a pinch of paprika with a squeeze of lemon if you don’t have sumac).
