Italian Farro Salad with Creamy Balsamic Dressing
Ingredients
Salad
- ~2.5 cups cooked farro from about 1 cup dry farro
- 1 can white beans - drained
- ½-3/4 cup shredded parmesan cheese i recommend shredding from a block
- ½ cup finely chopped basil
- 3 cups chopped cherry/small tomatoes from about 1 clamshell
- ¾ cup chopped pistachios
- 1 cucumber - diced
Instructions
- Add all salad ingredients to a bowl.
- Add dressing ingredients to a bowl or jar and mix until smooth.
- Toss together dressing with salad. Serve and enjoy.
