Chocolate Covered Kiwi Yogurt Clusters
Ingredients
- 1 cup chopped kiwi from about 4 kiwis
- ⅓ cup vanilla or plain yogurt of choice I used plain greek, use vanilla if you want sweeter
- ¼ cup almond butter or sub any nut butter
- scant 1 cup dark chocolate chips or pieces
- 1 teaspoon coconut oil
- pinch flaky salt (optional)
Instructions
- Add kiwi, yogurt and nut butter to a bowl. Mix together until fully combined.
- Spoon out mixture onto a sheet pan* lined with parchment paper (a plate or other flat surface also works). Freeze for 1-2 hours, until firm.
- Melt together chocolate and coconut oil. I melted mine for 3 30 second intervals in the microwave, stirring after each interval.
- Dunk each cluster in chocolate. Freeze again for 10-15 minutes, until set.
- Top with flaky salt if using, serve and enjoy. These can be stored in the fridge or freezer. I like to store mine in the freezer because I don't like biting into frozen things.
