Substitutions
- Coconut sugar - can be subbed with brown sugar.
- Maple syrup - can be subbed with honey.
- Oat flour - do NOT sub out the flour.
- Plant milk - you can use dairy milk.
Step-by-Step Instructions
Mix together batter.
Bake blondies.
Add cinnamon sugar to the blondies.
Serve.

Apple Cider Blondies (Gluten and Dairy free)
Ingredients
wet
- 2 eggs
- 2 cups apple cider
- ½ cup coconut sugar
- ½ cup almond butter
- ¼ cup melted coconut oil
- 1 teaspoon vanilla extract
- 2 tablespoons dairy free milk of choice can sub in cows milk if not dairy free
dry
- 1 ¾ cup oat flour
- 1 teaspoon cinnamon
- ½ teaspoon salt
Topping
- 1 tablespoon coconut sugar
- 1 teaspoon cinnamon
Instructions
- Add apple cider to a pot over medium heat. Bring to a simmer and simmer for about 30 minutes, until it is thick, jammy and reduced to ¼ cup.
- Preheat oven to 350 degrees.
- Add all wet ingredients to a bowl and mix. Fold in dry ingredients and mix again.
- Add batter to an 8x8 baking dish lined with parchment paper. Bake for 23-27 minutes, until a knife or toothpick comes out clean. I baked mine for 25 minutes on the dot. Let cool for ~20 minutes.
- Mix together topping ingredients. Sprinkle topping over blondies. Slice and enjoy.
