Instructions

Preheat the oven and grease a 10-inch cast iron skillet.

Substitutions
- Maple syrup: Honey can be substituted but I do not recommend using a granular sugar.
- Cottage cheese: Greek yogurt should work as a substitute. I also think low fat cottage cheese would work but I do not recommend fat free!
- Chocolate chips: I prefer dark chocolate but milk chocolate would be fine.

You can store the extra skillet in a sealed container in your fridge for up to 3 days. I definitely recommend serving it warm though!

Use a high-quality cottage cheese. Since cottage cheese is the base of this recipe, using a creamy brand like Good Culture, Kalona, or Nancy's will give you the best flavor and texture.
Grease your skillet well. Be generous with the butter or oil to help prevent sticking and make serving much easier.
Stick with oat flour. This recipe was only tested with oat flour, so I can't guarantee the same results with any other type of flour.

Ingredients
- 1 cup + 1 tablespoon blended full fat cottage cheese 2% would also probably work, don't use nonfat
- 1 large egg
- 1 teaspoon vanilla extract
- ⅓ cup maple syrup
- 1 cup oat flour
- tiny pinch salt
- ½ teaspoon baking soda
- 6 large marshmallows - halved
- ½ cup graham crackers if using large graham crackers quarter them, I used simple mills sweet thins
- ½ cup chocolate chips or chopped chocolate
Optional toppings and sides
- additional chocolate chips
- additional chopped marshmallows
- flaky salt
- ice cream
- additional crushed graham crackers
Instructions
- Preheat oven to 350 degrees.
- Add egg, blended cottage cheese, maple syrup and vanilla to a large bowl. Mix until smooth. Add flour, baking soda and salt to the same bowl and mix again until combined. Lastly fold in the chocolate chips, graham crackers and marshmallows.
- Coat 10 inch cast iron skillet in butter or oil. Add batter to the skillet and and spread until it is an even layer. Top with additional chocolate chips and marshmallows if desired.The cookie skillet will seem a little thin but it will puff up in the oven.
- Bake cookie skillet for 20-30 minutes, until a toothpick or knife comes out clean.
- Top skillet with flaky salt and graham crackers if using, serve with ice cream and dig in.
