Vegan Pumpkin Oat Flour Chocolate Chip Cookies

Preheat oven to 350 degrees.
In a bowl mix together wet ingredients. Pour in dry ingredients except for chocolate chips and mix to combine. Lastly fold in chocolate chips.
Using an ice cream scoop or a small handful of dough evenly distribute dough onto a lined baking sheet.* You do not need to form or flatten the dough, it will flatten out on its own. You should have 9 evenly sized cookies. Bake cookies for 12-14 minutes.
Let cookies cool for at least 10 minutes and then enjoy! I like to top my cookies with flaky salt but this is optional.

*Since this dough is vegan it is very sticky and wet. This is okay, work quickly and with wet hands.
