    Vegan Olive Oil Chocolate Chip Cookies with Chickpea Flour

    Making vegan, gluten free and nut free cookies is not an easy task. But there are a lot of nut and gluten free vegans out there and I want my recipes to be accessible.  These vegan olive oil chocolate chip cookies with chickpea flour check all of those boxes plus they are delicious.

    Vegan chickpea flour cookies

    I finally cracked the code to vegan, nut free and gluten free cookies using a combination of chickpea flour and aquafaba as a binder. Please do not try to sub out these ingredients because it will not work. I highly suggest giving chickpea flour a chance. It is cheaper than nut based flours plus it has protein and lends an amazing texture. Aquafaba is great because it is liquid that you would otherwise be throwing out. Also, as far as a binder aquafaba is the most similar to eggs. Click here if you want to find recipes to use chickpeas for.

    These cookies are so easy to make and only require 7 ingredients. All you have to do is mix together your wet ingredients, then pour in your dry ingredients and mix again. No mixing stand or refrigeration required.

    These cookies are also pretty healthy for you. They have healthy fats, protein and fiber which helps to offset the sugar. I used coconut sugar in this recipe because it is unrefined and I find that it doesn't give me a headache like table sugar does. However, you can sub this out with brown sugar if you would like. Olive oil can be subbed with another liquid oil like avocado but I love the flavor of olive oil.

    What ingredients do I need for these nut free and gluten free vegan chocolate chip cookies?

    • chickpea flour
    • olive oil
    • chocolate chips
    • aquafaba
    • vanilla extract
    • chickpea flour
    • baking soda

    How do I make vegan chickpea flour chocolate chip cookies?

    1. Preheat oven to 350 degrees.
    2. Add aquafaba to a bowl and whisk until frothy. Add the rest of the wet ingredients to a bowl. Mix until just combined. Pour in dry ingredients not including chocolate chips. Mix until just combined. Lastly fold in chocolate chips.
    3. Form 9-10 cookies on a lined sheet pan. Bake for 11-13 minutes. I baked mine for 12 on the dot.

    Ingredients

    Wet

    • 4 tbsp aquafaba (liquid from a can of chickpeas) - do not sub!
    • ⅓ cup olive oil
    • 1 tsp vanilla extract
    • ¾ cup coconut sugar

    Dry

    • 1 ½ cups chickpea flour (do not sub !)
    • ½ tsp baking soda
    • ½-1 cup chocolate chips (use as many or as little as you want!)

    Instructions

      great recipe!!! these turned out so so chewy, just how i need my cookies, and you would never guess they are made from chickpea flour. the fact that they are actually so healthy is awesome, so if you’re looking for a healthy snack give these a go.
