These vegan olive oil chocolate chip cookies with chickpea flour are a delicious and nut free cookie recipe.

Ingredients

Wet

  • 4 tbsp aquafaba (liquid from a can of chickpeas) - do not sub!
  • 1/3 cup olive oil
  • 1 tsp vanilla extract
  • 3/4 cup coconut sugar

Dry

  • 1 1/2 cups chickpea flour (do not sub !)
  • 1/2 tsp baking soda
  • 1/2-1 cup chocolate chips (use as many or as little as you want!)

Instructions

  1. Preheat oven to 350 degrees.
  2. Add aquafaba to a bowl and whisk until frothy. Add the rest of the wet ingredients to a bowl. Mix until just combined. Pour in dry ingredients not including chocolate chips. Mix until just combined. Lastly fold in chocolate chips.
  3. Form 9-10 cookies on a lined sheet pan. Bake for 11-13 minutes. I baked mine for 12 on the dot.
