- sundried tomatoes

Substitutions
- basil - this can be subbed with parsley or mint.
- green bell pepper - you can use any color pepper.
- celery - if you don't like celery you can sub another chopped veggie like carrots.
- parmesan - if you are vegan or dairy free you can leave out the parmesan or use vegan parmesan. If you leave out the parmesan add extra salt to the dressing.

You can store the extra salad in a sealed container in your fridge for up to 5 days.
Recipe Pro-Tips
Use a good quality olive oil for the best tasting dressing. This is my favorite olive oil.
My favorite butter beans are Jack's butter beans found on amazon.
If you are short on time skip air frying/roasting the artichokes. It does make them a lot more flavorful to cook them but the salad will still be delicious.

Tuscan Butter Bean Salad with Crispy Artichokes
Equipment
Ingredients
- 3 6.5 oz jars quartered artichokes in oil - drained
- 3 ~13 oz containers butter beans (about 4.5 cups) my favorite ones are linked
- 1 8 oz jar finely sliced sundried tomatoes can be dried or in oil, about 1 cup chopped
- 2 stalks celery - finely chopped
- 1 green bell pepper - finely chopped can be any bell pepper
- ½ cup finely chopped basil
Instructions
- Add artichokes to air fryer and air fry for 10-15 minutes. Alternatively you can bake the artichokes at 425 degrees for 30 minutes. If you're short on time you can skip this step!
- Add all dressing ingredients to a bowl or jar and mix until smooth and combined.
- Add all salad ingredients to a large bowl including the artichokes. Toss together with the dressing and dig in.
