It could not be easier to make and is packed with flavor and nutrients. This is a stew you will find yourself making again and again.

Ingredients
- onion - Onion is a must have.
- garlic - Garlic is a must have.
- can crushed tomatoes - Tomatoes are the base for the sauce.
- full fat coconut milk - Coconut milk adds creaminess.
- harissa - Harissa adds spice.
- basil - Basil adds fresh herby flavor.
- nutritional yeast - Nutritional yeast adds umami flavor.
- paprika - Paprika add spice and depth of flavor.
- za'atar - Za'atar adds spice and depth of flavor.
- butter beans - Butter beans are our protein source. I cooked mine from dried but you can use canned.
- kale - Kale is our veggie in this stew, I love dino Kale.

Substitutions
- basil - can be subbed with any herb you like, parsley would be great in this.
- coconut milk - cashew cream would be a great sub here. Heavy cream also works if you are not vegan.
- butter beans - any beans work here.
- kale - any leafy green works.
- nutritional yeast - parmesan works if you are not vegan.
Step-by-Step Instructions
Cook onions and garlic until softened.
Simmer all ingredients except for kale.
Stir in kale and let wilt.
Serve and enjoy!
Storage instructions
You can store the extra stew in a sealed container in your fridge for up to 4 days.

The brands vary in spice level but I would say it is medium spicy.

Spicy Harissa Butter Bean Stew (vegan)
Ingredients
- 1 onion - finely chopped
- 4 cloves garlic - minced
- 1 28 ounce can crushed tomatoes
- ½ cup full fat coconut milk
- ¼ cup harissa (from a jar or can, not ground spice) adjust to your spice preference
- ½ cup basil - finely chopped
- 3 tablespoons nutritional yeast
- ½-1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon za'atar
- pinch red pepper flakes - optional if you want more spice
- 4 cups butter beans - from about 3 cans
- 1 bunch kale - ribbed and finely chopped
Instructions
- Heat oil in a deep skillet over medium heat. Add onion and cook for 5 minutes. Add garlic and cook for another 5 minutes.
- Add all ingredients to the skillet except for the kale. Bring to a simmer and cook for 15-20 minutes.
- Turn off heat and add kale to the skillet and stir until wilted.
- Serve stew with toasty bread.

Most phenomenal beans! Flavor is incredible. I typically don't leave recipe reviews but I saw this didn't have any yet and thought people needed to know how delicious (and easy) this recipe is!
