Use a good quality cheese for the best tasting grilled cheese. I love Kerrygold or Organic Valley because they are both grass fed.
I love this grilled cheese on a thick sourdough bread but any bread works including gluten free.

Summer Peach Grilled Cheese
Ingredients
- 2 slices sourdough or bread of choice
- 2-4 slices cheddar cheese can also use grated cheese from a block
- ½ peach - finely sliced
- 1-2 tablespoons butter - divided
Instructions
- Heat about ½-1 tablespoon butter (or oil) over medium heat. Add the peach slices and cook for 2-3 minutes each side. You want the peaches to be browned and softened.
- Butter or oil one side of each of the slices of bread. Add peach slices and then cheese to one half of the bread and then add the other half.
- Add another tablespoon or so of butter or oil to a pan over medium heat. Add grilled cheese with the cheese side down. Heat for 3-5 minutes and then flip and repeat. If you are using a thick sourdough like I did I recommend pressing down with a potato masher or spatula while cooking.
- Serve grilled cheese and enjoy.
