Mediterranean Orzo Salad with Mint Yogurt Dressing
Ingredients
Salad
- 1 can chickpeas - drained
- 3 cups cooked orzo
- 1 bunch radishes - finely sliced
- 1 large cucumber - diced
Dressing
- ⅓ cup greek yogurt
- 3 tablespoons olive oil
- juice from 1 lemon
- 1 clove garlic - minced or grated
- pinch salt/pepper
- ¼ cup finely chopped mint
Instructions
- Add all dressing ingredients to a bowl or jar and mix until smooth.
- Add all salad ingredients to a bowl. Toss together with dressing. Serve and enjoy.
