Fall squash is some of my favorite produce. Acorn squash has such a unique flavor that I love. This Simple Roasted Acorn Squash with Tahini Sauce is one of my favorite ways to enjoy squash. This squash is tossed in simple spices and then roasted. Then it is covered with a delicious tahini sauce. This squash is a great plant based side dish and it also pairs great with a protein like tofu. Let's get into the recipe.

- acorn squash
- salt/pepper
- oil
- paprika
- cinnamon
- garlic powder
- tahini
Substitutions
- Tahini - can be subbed with cashew butter.
- Acorn squash - can be subbed with delicata or butternut squash.
Instructions for acorn squash with scallions
- Preheat oven to 400 degrees.
- Toss squash in salt/pepper, oil and spices. Add squash to a sheet pan lined with parchment paper. Roast for 30-35 minutes until softened.
- Add all tahini sauce ingredients to a bowl. Mix until smooth.
- Add squash to a plate and drizzle with tahini sauce. Top with scallions if using.
Storage instructions
You can store the extra acorn squash in a sealed container in your fridge for up to 4 days. I recommend storing the sauce in a separate sealed container.

This is because you are using a poor quality tahini. Good quality tahini will not be bitter.

Ingredients
Acorn Squash
- 1 large acorn squash - sliced into ½ inch thick slices I like to slice mine "half moon" style
- 1 teaspoon salt
- black pepper to taste
- 1 tablespoon neutral oil of choice ie olive, avocado, etc
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon garlic powder
Tahini Sauce
- ¼ cup tahini
- 2 tablespoons apple cider vinegar or sub another culinary vinegar
- 2 cloves garlic - grated
- 2-2 tablespoon water
- 1 tablespoon maple syrup
- 1 teaspoon mustard
- ½ teaspoon salt
- black pepper to taste
toppings
- ¼ cup fresh chopped scallions
- 3-4 tablespoons crumbled vegan or regular feta optional
