Maple Roasted Sweet Potatoes with Whipped Feta
Equipment
Ingredients
sweet potatoes
Whipped feta
- 8 oz block feta
- ¾ cup unsweetened greek or skyr yogurt
- 1 tablespoon maple syrup
- ¼ cup olive oil use code avocadoskillet for 20% off the linked oil
- 2 cloves garlic
- pinch salt/pepper
Toppings
- seeds from ½ pomegranate
- ¼ cup chopped pistachios
- ¼ cup fresh chopped mint
Instructions
- Preheat oven to 425 degrees.
- Add sweet potatoes to a bowl and toss together with all of the ingredients under the sweet potato section. Add sweet potatoes to a sheet pan lined with parchment paper or silicone. Roast for 25-25 minutes, until fork tender.
- Add all whipped feta ingredients to a food processor. Blend until smooth.
- Add whipped feta to a plate and top with cooked sweet potato. Sprinkle over pomegranate, pistachios and mint. If you use a dinner sized plate this will take up two plates. You could also use a large dinner tray.
