Literally any flavor works with tofu.

Ingredients
Tofu
- 1 block firm tofu - cubed and pressed
Miso Sauce
- 2 tablespoon miso paste
- 1 clove garlic - minced
- 1 teaspoon grated ginger
- 2 tablespoon soy sauce or aminos
- 2 tablespoon rice wine vinegar
- 1 tablespoon water
- juice from ½ lemon or lime
- 2 tablespoon cornstarch or arrowroot starch
- 1 tablespoon maple syrup
- black pepper to taste
Other optional ingredients
- Cooked grain of choice
- 1-2 tablespoons fresh chopped scallions or cilantro
Instructions
- Preheat oven to 425 degrees.
- Mix together your miso sauce ingredients.
- Toss your cubed tofu in the miso sauce and let it marinate for 10 minutes.
- Put tofu on a lined sheet pan, reserving the excess sauce. Roast for 30-35 minutes.
- Toss cooked tofu in miso sauce. Serve with your favorite sides. I went with rice and roasted carrots.
