Ingredients
  

Tofu

  • 1 block firm tofu - cubed and pressed

Miso Sauce

  • 2 tablespoon miso paste
  • 1 tablespoon sesame oil or oil of choice
  • 1 clove garlic - minced
  • 1 teaspoon grated ginger
  • 2 tablespoon soy sauce or aminos
  • 2 tablespoon rice wine vinegar
  • 1 tablespoon water
  • juice from ½ lemon or lime
  • 2 tablespoon cornstarch or arrowroot starch
  • 1 tablespoon maple syrup
  • black pepper to taste

Other optional ingredients

  • Cooked grain of choice
  • 1-2 tablespoons fresh chopped scallions or cilantro

Instructions
 

  • Preheat oven to 425 degrees.
  • Mix together your miso sauce ingredients.
  • Toss your cubed tofu in the miso sauce and let it marinate for 10 minutes.
  • Put tofu on a lined sheet pan, reserving the excess sauce. Roast for 30-35 minutes.
  • Toss cooked tofu in miso sauce. Serve with your favorite sides. I went with rice and roasted carrots.
