Ingredients
  

Salad

  • 1 can chickpeas - drained
  • 3 cups cooked orzo
  • 1 bunch radishes - finely sliced
  • 1 large cucumber - diced

Dressing

  • cup greek yogurt
  • 3 tablespoons olive oil
  • juice from 1 lemon
  • 1 clove garlic - minced or grated
  • pinch salt/pepper
  • ¼ cup finely chopped mint

Instructions
 

  • Add all dressing ingredients to a bowl or jar and mix until smooth.
  • Add all salad ingredients to a bowl. Toss together with dressing. Serve and enjoy.
